Buttermilk Fried Chicken & Waffles

This is next-level chicken & waffles—crispy, juicy chicken tenderloins fried in Kai’s Chilli Oil, seasoned to perfection, and finished with a sweet-spicy drizzle and Kai’s Hot Buzz!


Ingredients:

For the Chicken Tenderloins:

  • 8 chicken tenderloins
  • 2 cups buttermilk (for soaking, 1 hour)
  • Kai’s Chilli Oil (for frying)

Dry Coating Mix:

  • 1 cup flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 tsp Kai’s Italian
  • 1 tsp Kai’s Peckish
  • 1 tsp Kai’s KKC
  • 1 tsp black pepper

For the Waffles:

  • Store-bought waffles (warmed in the oven at 180°C/350°F for 5 minutes)

For the Spicy Drizzle Sauce:

  • 2 tbsp Best Foods mayo
  • 1 tbsp Kai’s Chilli Oil
  • 1 tsp Worcestershire sauce
  • 1 tbsp BBQ sauce
  • 1 tsp mustard

Finishing Touch:

  • Kai’s Hot Buzz (for drizzle at the end)

Method:

Step 1: Prep the Chicken

  1. Soak chicken tenderloins in buttermilk for 1 hour to make them extra juicy.

Step 2: Coat the Chicken

  1. In a bowl, mix flour, corn-starch, Kai’s Italian, Kai’s Peckish, Kai’s KKC, and black pepper.
  2. Remove tenderloins from buttermilk, let excess drip off, and coat well in the dry mix. Press the flour on for max crisp.

Step 3: Fry the Chicken

  1. Heat Kai’s Chilli Oil in a deep pan to 175°C (350°F).
  2. Fry chicken tenderloins for 4-6 minutes, flipping halfway, until golden brown and crispy.
  3. Drain on a wire rack for that ultimate crunch.

Step 4: Make the Drizzle Sauce

  1. Whisk together Best Foods mayo, Kai’s Chilli Oil, Worcestershire sauce, BBQ sauce, and mustard until smooth.

Step 5: Assemble & Finish

  1. Place warm waffles on a plate.
  2. Top with crispy chicken tenderloins.
  3. Drizzle the spicy sauce over the top.
  4. Drizzle generously with Kai’s Hot Buzz for that final spicy-sweet punch.
