Chilli Tuna Salad with Crunchy Croutons

This bold and flavorful tuna salad gets a serious kick from Kai’s Chilli Oil, balanced with crisp veggies and crunchy homemade croutons made from fresh bread. Perfect for a light yet satisfying meal!

Ingredients:

For the Salad:

  • 2 cans tuna (in olive oil or brine, drained)
  • Kai’s Chilli Oil (measure with the heart)
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, finely sliced
  • 2 cups mixed salad greens (lettuce, arugula, or spinach)
  • 1 tbsp lemon juice
  • Salt & pepper to taste

For the Homemade Croutons:

  • 2 slices of your favourite bread, cut into cubes
  • 1 tbsp olive oil (Kai’s Garlic & Rosemary Infused Oil works great!)
  • ½ tsp salt
  • ½ tsp dried oregano or Italian seasoning

For the Dressing:

  • 2 tbsp olive oil (Kai’s Garlic & Rosemary Infused Oil for extra flavor)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp HotBuzz - Hot Honey
  • 3 tbsp of mayonnaise
  • ½ tsp salt
  • ½ tsp black pepper

Instructions:

1. Make the Croutons

  1. Preheat oven to 180°C (350°F).
  2. Toss bread cubes with olive oil, salt, and oregano.
  3. Spread on a baking sheet and bake for 10-12 minutes, tossing halfway, until golden and crispy.

2. Prepare the Salad

  1. In a large bowl, mix the tuna with Kai’s Chilli Oil, lemon juice, salt, and pepper.
  2. Add cherry tomatoes, cucumber, red onion, and mixed greens. Toss gently.
  3. Top with crunchy croutons.

3. Make the Dressing

  1. In a small bowl, combine Kai’s Garlic & Rosemary Infused Oil, lemon juice, Dijon mustard, honey, mayonnaise, salt, and pepper.
  2. Shake well until fully combined.

4. Assemble & Serve

  • Drizzle the dressing over the salad and toss lightly.
  • Serve immediately and enjoy the spicy, fresh, and crunchy goodness!
