Hot Buzz Honey-Glazed Salmon with Kai’s Signature Sides


A perfectly seared salmon fillet glazed with Kai's HotBuzz, served with crispy roasted Kipfler potatoes and zesty stir-fried broccolini for a well-rounded, flavour-packed meal.


Ingredients:

For the Salmon:

  • 2 salmon fillets (about 180g each)
  • 2 tbsp Kai's Zested - Lemon infused olive oil
  • Salt and pepper to taste

For the Hot Buzz Glaze:

  • 3 tbsp Kai's Hot Buzz
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 garlic clove, minced
  • Optional: ½ tsp chili flakes (for extra heat)

For the Roasted Kipfler Potatoes:

  • 500g Kipfler potatoes, halved lengthwise
  • 2 tbsp Kai's G&R (MEASURE WITH THE <3)
  • 1 tbsp Kai's Peckish Chicken Booster
  • Black sea salt

For the Zesty Stir-Fried Broccolini:

  • 1 bunch broccolini
  • 1 tbsp butter
  • 1 tbsp Kai's Zested - lemon infused olive oil
  • 1 tsp Kai's Peckish Chicken Booster

Instructions:

Roast the Kipfler Potatoes

  1. Preheat oven to 200°C   
  2. Toss halved Kipfler potatoes with Kai's Garlic & Rosemary Infused Oil, Kai's Peckish Chicken Booster, salt, and pepper.
  3. Spread potatoes on a baking tray and roast for 35-40 minutes, flipping halfway, until golden and crispy.

 Prepare the Hot Buzz Salmon

  1. Pat salmon fillets dry with a paper towel. Season with salt and pepper.
  2. Heat Kai’s Zested olive oil in a pan over medium-high heat.
  3. Sear salmon skin-side down for 3-4 minutes until crispy. Flip and cook for another 2-3 minutes until just cooked through.
  4. In a small bowl, mix Kai's Hot Buzz, soy sauce, lemon juice, Dijon mustard, garlic, and chili flakes.
  5. Reduce heat to medium and pour glaze over the salmon, cooking for 1-2 minutes while spooning glaze over the fillets.

 Stir-Fry the Broccolini

  1. In a pan over medium-high heat, add Kai's Zested olive oil  and melt butter.
  2. Add broccolini and stir-fry for 4 minutes, tossing occasionally.
  3. Sprinkle  Kai's Peckish Chicken Booster, mixing well to coat evenly.

 Serve & Enjoy!
