Steak & Baked Taters with Chimichurri 🥩🔥🥔

 

A hearty, flavour-packed meal featuring juicy steak, fluffy baked potatoes, and smoky grilled tomatoes, finished with a bold homemade chimichurri.

Ingredients:

For the Steak:

  • Rib eye or sirloin steaks
  • 1 tbsp Kai’s Chilli Oil
  • Salt & black pepper, to taste
  • 2 - 4 garlic cloves
  • 2 tbsp butter

For the Baked Potatoes:

  • 2 large potatoes
  • 1 tbsp olive oil
  • 1 tbsp Kai’s Peckish Chicken Booster (plus extra for serving)
  • 2 tsp butter

For the Grilled Tomatoes:

  • 1 bunch vine-ripened cherry tomatoes

For the Chimichurri:

  • 1 tsp smoked paprika
  • ¼ cup fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • ¼ small red onion, finely diced
  • ¼ cup olive oil
  • ½ tsp black sea salt
  • ½ tsp dried oregano
  • Juice of ½ lemon
  • ½ tsp black pepper
  • ½ tsp Turkish chilli flakes

Method:

  1. Prepare the Steak – Remove steak from the fridge and let it sit at room temperature for 20–30 minutes. Pat dry and season both sides with salt and black pepper.

  2. Bake the Potatoes – Preheat oven to 180°C (350°F). Poke the potatoes with a fork, rub with olive oil, and season with Kai’s Peckish Chicken Booster. Bake for 45 minutes until tender. Once done, cut open, fluff the insides with a fork, add butter, and sprinkle with more Kai’s Peckish Chicken Booster.

  3. Cook the Steak – Heat a stainless steel pan over high heat. Add Kai’s Chilli Oil, then sear the steak for 3–4 minutes per side for medium-rare. In the last minute, add butter and garlic cloves, basting the steak with melted butter. Remove and let it rest for 5–10 minutes.

  4. Grill the Tomatoes – In the same pan, add the vine tomatoes and cook for 2–3 minutes, tossing occasionally, until softened and slightly charred.

  5. Make the Chimichurri – In a bowl, mix smoked paprika, parsley, garlic, red onion, olive oil, black sea salt, oregano, lemon juice, black pepper, and Turkish chilli flakes. Stir well and let sit for 5–10 minutes to develop flavours.

  6. Serve & Enjoy! – Plate the steak with baked potatoes and grilled tomatoes. Spoon chimichurri over the steak and enjoy!
